Instructions
- Prepare the grill for indirect cooking over medium-low heat (350º-400ºF).
- In a large bowl, combine the batter ingredients and whisk until smooth.
- In another medium bowl, add the blueberries, followed by the sugar, cornstarch, and vanilla extract. Gently stir.
- Grease the inside of the cast-iron skillet with additional butter then add 3/4 of the blueberry mixture.
- Add all of the batter to the skillet and top with the remaining blueberries.
- Grill the skillet over indirect medium heat, with the lid closed, until the top begins to brown, approximately 45 minutes.
- In a small bowl, combine the topping ingredients then add the mixture evenly across the top of the cobbler.
- Lower the lid and grill another 15 minutes.
- Remove and serve.
