1. The thick layer of fat on top of a brisket will protect the meat below as it cooks for 10 to 15 hours.

2. Slip a sharp knife under the membrane on the underside and remove it.

3. Also remove the hard fat near the pointed end of the brisket.

4. The brisket should look like this before you season it and barbecue it.
